Ingredients
1 cup heavy whipping cream, chilled
1/2 cup powdered sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
Directions
1. In a large mixing bowl, combine the chilled heavy whipping cream, powdered sugar, lemon zest, lemon juice, and vanilla extract.
2. Using an electric mixer, start on low speed to combine the ingredients, then gradually increase to medium-high speed.
3. Whip the mixture until stiff peaks form. This typically takes about 3 to 5 minutes. Be sure not to over-whip, as the mixture can turn to butter.
4. Once the frosting has reached the desired consistency, use it immediately to frost your favorite cake, cupcakes, or cookies.
5. If not using right away, you can store the frosting in the refrigerator for up to one day. Gently re-whip before using if necessary.
